Fluffy Cinnamon Rolls with Cream Cheese Frosting

Makes 12 rolls

There is something nostalgic about the smell of cinnamon rolls.  As a kid, I would always sneakily add a tube of Pillsbury cinnamon rolls to the shopping cart.  They were so delicious, but there’s nothing like a batch of homemade rolls.  The dough is soft, buttery, and has the perfect amount of cinnamon sugar layered inbetween.  This recipe is definitely a crowd pleaser and makes for the perfect weekend brunch item! 


For dough:

  • ¾ cup warm milk
  • 2 ¼ tbsp dry active yeast (1 package) 
  • ¼ cup sugar
  • 3 eggs, whisked 
  • ¼ cup butter, melted and cooled 
  • 3 ½ cups bread flour 
  • ½ tsp salt

For filling:

  • ½ cup soften butter
  • 1 ½ tsp cinnamon
  • ⅔ cup dark brown sugar

For frosting: 

  • 4 oz cream cheese, softened
  • 3 tbsp butter, softened 
  • ¾ cup powder sugar 
  • ½ tsp vanilla extract 

Bakin’ Time

  • Melt ¼ cup butter, set a aside 
  • Heat milk in a microwave safe bowl for 30-45 seconds.
  • Transfer milk into a large mixing bowl and combine sugar and yeast, let it sit for 5 minutes until foamy 
  • Mix in melted butter and eggs until well combined 
  • Stir in bread flour and salt until dough begins to form 
  • Using hook attachment, knead for 8-10 minutes. The dough should form a nice ball and not too sticky. Add 2 tbsp of flour as needed
  • Once you have a smooth dough ball, transfer dough to a well oiled bowl and cover with plastic wrap and a kitchen towel in a warm area 
  • Allow dough to rise for 1-1.5 hrs or until it has doubled in size
  • Once dough has risen, mix together butter, cinnamon and dark brown sugar until it becomes a paste 
  • On a floured surface, roll out dough into a 14×9 in rectangle about a ¼ inch thick. 
  • Spread cinnamon sugar mixture evenly across the dough leaving a ¼ inch margin around the border
  • With the longer side of the dough, roll dough tightly and pinch the seam closed
  • Using a serrated knife, cut dough into 12 pieces 
  • Place rolls in a greased 9×13 in baking pan and cover with a towel for 30-45 minutes to let it rise
  • Preheat oven to 375 degrees and bake rolls for 30-35 minutes or until golden brown
  • While the rolls are baking, combine cream cheese, butter, powdered sugar and vanilla in a bowl until well combined. If the frosting is too thick, you can add a splash of milk to thin it out.
  • Allow rolls to cool slightly before topping it with frosting.
